Dorado

Mesquite Smoked Aged

90 Proof - 45% ABV
Single Malt

The original brainchild for our product line, the Dorado required that we learn how to malt barley.   Born out of barbecuing with the mesquite scraps from Arroyo Design while drinking Scotch, we had the idea to malt over mesquite instead of peat.  We wanted to create a product that was a true reflection of the Sonoran Desert.  To achieve that, we dry our malt over a mesquite fire using the species Prosopis Velutina, the predominant species in Southern Arizona.

With sweet tobacco and dark chocolate on the nose, underpinned by sandalwood, the Dorado may carry soft tannins on the palette with desert campfire and spice notes. (Scroll below for awards.)

Clear

Mesquite Smoked Unaged

Single Malt

Every time Stephen distilled the mesquite-smoked product, he noticed the unique complexity of the distillate coming out of the still.  Not something we originally planned on marketing, the Clear mesquite-smoked unaged whiskey got such a great reception from a tasting with the Tucson Chapter of the US Bartenders’ Guild, that we had to start bottling it.  Their passion for our Clear as a smokey base for mixing cocktails couldn’t be denied.  And having spent many an evening with it neat or on the rocks, we can say it is quite pleasant by itself.

You may get complex aromas of leather, dried ancho chili, dust, and dried herbs on the nose.  Smoke dominates the palette up front with sweet, vegetal notes on the finish. (Scroll below for awards.)

Classic

Unsmoked Aged

84 Proof - 42% ABV
Single Malt

Before we ever introduced any mesquite component, Stephen had to learn how to just make whiskey.  Initially called “The Control” while in product-development,  it was the baseline established to improve upon and compare against what came next.  Modeled after a Highland or Speyside Scotch, it lacks the smoke of the Islay Scotches.

With caramel, molasses and marzipan on the nose, and ripe stone fruits up front on the palette, the Classic delivers a spice and honey finish.  After pouring, let it rest in the glass for a few minutes and nose before tasting.  (Scroll below for awards.)

Distiller’s Cut

Single Malt

Every American oak cask used to mature Whiskey Del Bac imparts its own distinct character. For Distillers Cut we have specially selected each barrel to work in harmony and showcase Cask-Strength Single Malt.

By utilizing varying malts, cask types, and different finishing methods, Distillers Cut is an expression of the art of blending, resulting in deeper nuanced layers. Whiskeys of differing ages are also selected to achieve overall balance and compatibility. By nature, it is a marriage of Scottish tradition and American innovation. Offered at cask-strength every time, Distillers Cut is a pure reflection of its makers and of the place from which it comes.

BATCH 1 – For our first batch of Distillers Cut, the nose offers notes of bright citrus, dried stone fruit and herbs. The palate tastes of caramel toffee spice integrated with cherry, leather and sassafras. A lingering vanilla sweetness develops with its lengthy finish. Subsequent batch proofs and flavor profiles will vary depending on the blend and notes will be provided via the distillery website

BATCH 2 – December 2017 – Our second offering of Distillers Cut benefits from Madeira cask finishing our single malt whiskey.  Incorporating the fortified wine-soaked barrels into the blend has yielded one of our most complex blends to date.

The nose is rich and nuanced with notes of roasted nuts, burnt sugar and bright citrus.  The palate is equally rounded, tasting of Madagascar vanilla, stewed fruit, and toffee.  The silky mouth feel is balanced by stony minerality and herbs.
Madeira is a fortified wine available in a range of dry to sweet styles. It gets its name from the island of Madeira within a small archipelago southwest of Portugal. Madeira’s unique taste comes from repeatedly heating the wine. The heating creates a wine with a fascinating depth of flavors.  Due to these qualities our current offering of Distillers Cut yields an extremely nuanced cask strength whiskey.

Winter Release

100 Proof

Available only once a year, our Winter Release is as unique and fleeting as it is savory. Different casks and finishes are blended in harmony, and solely by taste, yielding a one-of-a-kind Single Malt Whiskey that will never be replicated. While different every year the blend is made with the same intention.

This year’s blend is an assertively smoked offering bottled at 100 proof. The nose opens with immediate notes of charred camp fire embers. Mesquite smoke gives way to aromatics of sweet tobacco and menthol reminiscent of green cardamom and mint. The aggressive smoke is tempered by its round body and dark chocolate mid-palate, which gives way to sweet vanilla and fruit custard on the finish.

“We have had a lot of people requesting a smokier Dorado, so we decided to make our first Winter Release exactly that,” says head distiller Nathan Thompson-Avelino. “We have also raised the proof to 100 from 90 to handle that extra smoke. It’s turned out really beautifully.”
